Yummy Gingerbread Men
On this week's What Now, we're cooking up some scrumtious Gingerbread Men. Here's the recipe if you want to try them at home:
GINGERBREAD MEN
350grm Softened Butter
200 Grm Brown Sugar
50grms Golden Syrup
3 eggs
Cream these ingredients well and beat for 3 minutes, add 3 room temperature eggs and continue to beat for a further 3 minutes.
600grms Flour
2 level teaspoon Baking Powder
1 heaped teaspoon of cinnamon
1 heaped teaspoon of mixed spice
1 heaped teaspoon of ginger spice
Combine all of the above ingredients with the mixture and beat for 1-2 minutes. (Do not overbeat)
Allow dough to rest for 1 hour in the fridge. Knead the mixture and then remove from bowl and roll out onto a floured surface around 2mm thickness. Cut out gingerbread men and bake at 180 degrees for 10-15 minutes. Recipe is for around 25 biscuits.
BUTTER ICING
250 grams of icing sugar
50 grams of softened/melted butter
1/2 teaspoon of vanilla essence
3 tablespoons of hot water
Combine all of these together, you can either do this by hand or in a beater.
Split mixture into piles if you wish to add food colouring for various colours.
If mixture is a little firm carefully add 1 teaspoon at a time WARNING: you do not want the mixture to be runny.
