Divine Cakes are joining us in-studio to create some scary Halloween cupcakes! Here's the recipe so you can bake up some magic at home:
Vanilla Sponge Cake RecipeIngredients
4 eggs175 gm (6 oz) caster sugar flavoured
1/2 tsp Vanilla Essence175 gm (6 oz) plain flour50 gm (2 oz) unsalted butter, melted
Preparation
Preheat the oven to 140 degrees Celsius. Whisk the eggs and sugar together in a bowl over a pan of hot water. Continue to whisk until the mixture has doubled in volume and is light and creamy. Remove from the heat and continue to whisk until cold and thick. Lightly fold in the flour,melted butter and vanilla essence. Gently pour the mix into the cupcake foils and put in the pre-heated oven for about 25 minutes. The easiest way to test is with a skewer, which will come out clean when the sponge is ready. Allow to cool for 10 minutes.
BUTTER ICING250 grams of icing sugar
50 grams of softened/melted butter
1/2 teaspoon of vanilla essence
3 tablespoons of hot water
